Directions:

Step One: Prepare the Cauliflower
Separate cauliflower into florets then cut away as much stem as possible. Separate into 3-4 batches and break up the cauliflower in a food processor until the mixture resembles rice or couscous.

Step Two: Cook the Cauliflower
Heat the oil in a large skillet over medium-high heat. Add onions, and stir to coat in oil. Stir frequently, cooking for 6 minutes, until the onions are golden brown. Add the processed cauliflower. Add salt, and cook 4 minutes more, stirring frequently, until the cauliflower has softened then remove the skillet from the heat.

Step Three: Serve
Spoon the cauliflower into a serving bowl and season to taste with Himalayan salt and Fresh Ground Black Pepper. Serve warm as a side to your favorite Heart Healthy dish.

1 large head of cauliflower
3 tbsp olive oil
1 medium white onion, very finely chopped

Now, think back to the times that a resolution was over almost before it had begun. This year instead of a resolution, aim to set achievable goals.

A goal is a defined and measurable version of a resolution. Having a well defined goal provides a way to stay on track even through tough obstacles. Setting small achievable healthy eating goals can provide successful changes at the beginning of each year instead of another busted resolution.

Having a mindset of "achieving goals" instead of "sticking to resolutions" can help develop a solid plan. A plan provides a way of achieving success instead of blindly trying to stick to a resolution based on will power alone.

These are some steps to heathy eating goal setting:

1. COMMIT TO MAKING A CHANGE IN EATING HABITS
No changes will come easily and success is difficult unless there is a willingness to change. All the fad diets and eating trends won't make a difference until there is a real commitment to healthy eating. First make the decision to have a healthier lifestyle and then commit to following through with new habits.

2. BE SPECIFIC
Having a goal is great but having a broad suggestion of a goal is where many fall down. "Eating Healthy" might sound great but what does it mean? Being specific and focusing on individual aspects of healthy eating can increase success. Setting a calorie target, cutting out unhealthy fats, or eating 5 servings of fruit and vegetables are all more specific goals that will build towards and overall Heart Healthy lifestyle.

3. PUT IT DOWN IN WRITING AND LOOK AT IT OFTEN
Physically writing down a goal and keeping it where it is seen daily is a huge step toward success. The daily reminder of your commitment will be a huge motivator when less healthy options show themselves.

4. TAKE ACTION NOW
It’s okay to have no idea how to accomplish a goal. Having belief that you can achieve that goal is what really counts and dedication to the goal is how to get there. Being dedicated to achieving a goal will provide the motivation to seek out the knowledge required. Knowing how to eat for a healthy lifestyle will come if dedication to eating for a healthy lifestyle is already there.

5. MAKE IT MEASURABLE
Goals are not goals if they are not able to be measured. Having the ability to achieve something is only available if there is a way to measure that achievement. Think back to the specific goals, they are all defined to be measurable. With a goal that is measurable there is also the ability to track the progress towards that goal. A reasonable timeline for goals, and measure progress is a huge key to success in hitting that goal.

6. ONE BAD DAY DOES NOT MEAN FAILURE
On the road to achieving goals there will be challenges. Challenges can last a day or a week or just one meal. Treat momentary slips on the road to achieving goals as a setback, not as a failure. Having the mindset of not giving up will allow for continuous movement towards goals and eventual success.

Step 1 - Prep the Oven and Ingredients
While the oven is preheating to 400F, place the potato slices in the bottom of each of the 12 cups of a muffin tray. Portion the red peppers between the cups and wrap one strip of bacon around the inside of each cup in the muffin tray.

Step 2 - Bake the Bacon and Veggies
Bake for 10 minutes until the bacon fat begins to bubble around the potatoes.

Step 3 - Add the Eggs and Bake
Remove the muffin trays from the oven and crack an egg into each cup, breaking the yolk and lightly mixing the peppers and eggs. Sprinkle Salt and Pepper to taste. Bake an additional 10 minutes.

Step 4 - Serve or Store
Release the Bacon from the Muffin trays using a spatula. Serve with some hot sauce if you need the kick or store for your meal prep!

12 strips of bacon
2 red potatoes, peeled and sliced into sixes
1 diced red bell pepper
12 large eggs
